GILDA is a celebration of the Basque Country and its unmatched spirit for food, drink, and gathering. I aim to take the same simple approach to elevating the natural ingredients and pair them with favorites like Txakoli, Vermouth, Sidra, Rioja, and of course the inimitable Spanish-style Gin & Tonics. I’m thrilled to host these Friday Happy Hour events once a month over the course of the summer at the recently opened Bloom Room by OTR’s beloved cheese haven The Rhined. Save the dates: May 13, June 10, July 15, and August 12… all on Friday’s and we’ll be high-pouring from 4-8. Txoooooootx!!

Matty returns to his Alma Mater! While working at Parachute, Matty was nominated for a Jean Banchet award for "BEST SOMMELIER" in CHICAGO. The beverage program became well known for it's harmony with Johnny and Beverly's exciting globally influenced, Korean-leaning cuisine.

Table, Donkey, Stick - "Terroir Tuesdays"
Matty will be featuring his wine for a special Ramato edition of "Terroir Tuesdays." Ramato is a style of wine from Friuli-Venezia Giulia where Pinot Grigio (PINO GRIS) was commonly used to make copper colored wine in ITALY. Come explore this historical style with us. These wines will exhibit some of the reasons why Matty chose to make his CB001>>> Pinot Gris in this same maceration style. Tasting put together by sommelier Matt Sussman.
